Recipe for 100% Beaufort Savoyard fondue

The 100% Beaufort fondue is a revisited version of the traditional Savoyard fondue . It showcases the delicious products of our region such as Beaufort cheese, white wine and country bread. Beaufort cheese is known for its mild and creamy taste, and for its melting texture when melted. The 100% Beaufort fondue is therefore very tasty and substantial.

100% Beaufort fondue offers an opportunity to warm up winter evenings and gather with loved ones while enjoying a comforting dish.

  • Preparation time: 15 minutes

  • Quantity: 4 people

Ingredients

  • 1 clove of garlic
  • 2 glasses of dry white wine Apremont de Savoie per person
  • 800 g of Beaufort cheese
  • 1 liqueur glass of kirsch
  • Pepper and nutmeg
  • 600-800 g of country bread

Utensils

  • 1 fondue pot or 1 enamelled saucepan
  • 1 bowl
  • 1 fondue stove to put on the table and fondue forks
  • 1 wooden spoon
  • Methylated spirits to light the stove

Preparation of ingredients:

  1. Grate the cheese
  2. Cut the bread into cubes
  3. Cooking:
  4. Rub an enameled pan with a clove of garlic. Heat the wine: as soon as it starts to foam, add the Beaufort cheese, stirring constantly with a wooden spoon.
  5. Add pepper and a little nutmeg
  6. When the Beaufort has melted, add the Kirsch, stirring gently.
  7. As soon as the preparation is thickened and rises in the casserole dish, serve by placing it on the stove at the table with a basket of bread.

Roussette de Savoie is an excellent choice to accompany fondue because of its fruity aromas and acidity which contrast with the creamy and smooth texture of Beaufort.
