Terroir and vinification
Coming from our south/south-east facing clay-limestone hillsides, Bullicîmes benefits from a temperate climate, ideal for preserving freshness and aromatic expression.
After a short maceration, the grapes are pressed and then vinified at a controlled temperature.
The second fermentation—the sparkle development—takes place slowly over 6 to 8 months at a low temperature, before disgorgement.
This precision work gives rise to a regular, fine, and persistent bubble.
